Lucas is the Founder of Queens restaurant in Liverpool. The bistro opened a few years back and has become a hidden gem of sorts - or at least that was the case until a recent positive review from Jay Rayner.  

The Guardian Food Critic recently visited Queens and wrote a review which has propelled the business into the consciousness of foodies all over the area. Lucas came on to the podcast to talk about the review and what it has done for his business. We also touched on some industry topics such as rising costs and developing a strong team.
