Once I discovered what a Toji was, that's a Master of Sake by the way, I learned about the Eigashima or White Oak Distillery in Akashi. It's primarily built for and produces Sake which is Japanese Rice Wine, however for two months of the year their Toji produces Whisky. With a Sake Master at the helm, just how good is it?
