We break down our conversation into three portions – talking about a parent having celiac disease, talking about a diagnosis for the child, and talking about the diagnosis of a sibling. On this podcast I speak with Cindi Little the Everyday Gluten Free Gourmet. I wanted to chat with Cindi to explore some of the ways gluten free convenience foods and mixes which have relatively recently exploded onto the market can be used in creative ways to be more satisfying and help us expand our daily menu selections.

Cindi and I speak about gluten free breaded chicken pieces that are now widely available as well as the many gluten free sauce and gravy mixes we find in our grocery stores. Cindi and I acknowledge that many people don't have access to the flours that would be used in traditional gluten free baking, but the abundance of gluten free baking mixes now available can go a long way to filling that gap.

Hapy New Year! It's the beginning of January 2026 which means I can take the opportunity to speak again with Ellen Bayens of theceliacscene.com about news and information she has brought to our attention over the past month.

Ellen speaks to us about a study done on children properly diagnosed with celiac disease who, after months on the gluten free diet and lower antibody numbers are still showing symptoms. The study may show a link between these symptoms and a condition called DGBI (Disorders of Gut-Brain Interaction).

Ellen has informed us of the testing process of an app for our phones which is in development that will allow us to scan food labels and with the app using AI, it will determine if the food is gluten free or not. Both Ellen and I have praise and concerns about this one.

I explain to Ellen the continuing process of the Celiac Canada petition to government to allow for a tax "break" to compensate for our increased food costs. Ellen reminds us of the updated Gluten Free Fast Food Listings on her website for both Canada and the US. As well, Ellen fills us in on her test of a new pizza available at Costco and other cooking she did over the holidays.

Ellen and I also spoke about a Survey that is online from Conquer Studies through Dr. Diana Major and the University of Alberta regarding the cost of gluten free food for families. If you are an adult with celiac disease or the parent of a child with celiac disease, your opinion and experiences will help form a true picture of what Canadians are experiencing.

We talked about the Gluten-Free marketplace that was held recently in Charlottetown, PEI.

Ellen and I spoke about issues around AI and how that is affecting some recipe websites – the lesson here is to follow bloggers you know and trust.

It's the beginning of November 2025 and my opportunity to discuss news and information that has come out in the past month with Ellen Bayens of theceliacscene.com. Ellen keeps us up to date on what's happening regarding celiac disease and gluten free.

This is a re-issue of the petition from last year, as unfortunately it died when an election was called. Last time we received more than 26,000 signatures. Let's try for 30,000 this time. Ellen and I spoke at length about some of the information that came from the recent International Celiac Conference in Finland. Melissa Secord from the CCA was part of a Canadian "team" attending who did a great job presenting and interacting with experts from all over the world. We touched on research regarding a promising advancement in testing for celiac disease by a simple blood test. We also speak about research to try and "turn-off" the celiac switch and learn more about that.

We learn why some people who think they might be celiac, might instead need to be on a temporary FODMAP diet to reset their digestive system with the help of a dietician.
