Green Tea:
Japanese (or other steamed heat teas) : 140-185°F
Chinese (or other dry heat teas) : 160-185°F
Yellow Tea: 165-180°F
White Tea : 170-185°F
Oolong Tea : 185-195°F
Black Tea : 180-200°F
Dark Tea : 200°F
Boiling water and then letting it cool removes oxygen from the water and decreases the flavor of the tea. It's better to bring water up to (rather than down to) the appropriate temperature.

Tea steep time breakdown
- Black tea: 3 to 5 minutes
- Green tea: 1 to 2 minutes
- White tea: 2 to 3 minutes
- Oolong tea: 2 to 3 minutes
- Pu-erh tea: 5 minutes
- Purple tea: 3 minutes
- Herbal tea: 5+ minutes
- Rooibos tea: 5+ minutes

Pouring your water from high up agitates the leaves more. It can extract more flavor but can also bring out bitterness. Pouring gently and closer to leaves will not agitate the leaves as much, resulting in a more mellow brew.

The biggest surprise is that approximately 80% of the water soluble caffeine in tea is released during the first 30 seconds of brewing. So, to remove most of the caffeine from your tea, simply pour boiling water over the loose-leaf tea leaves in your teapot, allow the tea to steep for 30 seconds, and then discard the liquid. Use the same tea leaves with fresh hot water to brew a close to fully decaffeinated cup of tea for drinking.
