It is May, so that means Celiac Awareness Month! Living Gluten-Free is a necessity for those of us with Celiac disease.  Food is a common ground and a need for us all.  For me, as a Chef, it is my love language.  Living with a condition that forces you to be on a special diet doesn't change this. If anything, it makes us rise to the occasion to enjoy every bite more than the last. Our tastes and diet needs are as diverse as our individual stories. My continued goal with Allergy Dragon's Lair Podcast is to bring you the people behind these conditions. We are so much more than the food we can and can't eat.

So what does an athlete and a chef have in common? In our case, we both are living our lives with Celiac Disease. I virtually met KJ on Instagram @theceliathlete on that platform and her Blog of the same name. KJ shares her journey as an athlete that is meat-free and gluten-free.
 I found her morning stories of the challenges of weather, lighting, and anything else she posted on IG. Not only funny but inspirational for my day.  Especially on those cold dark mornings, KJ would be posting about the run she had just been on. I would cheer myself out of my cozy bed, saying if she can run in this, then I can at least get up, and go to work! 
This episode was so much fun to record. We talked about our mutual connections of living in the Kentuckiana area, our weird bodies, and our love of sushi. KJ reminded me that life is a marathon, not a sprint, and that we can do anything we set our minds. May is a big month for awareness. It is Celiac Awareness Month, Food Allergy and Asthma Month, Mental Health Awareness Month, and Asian American Pacific Islander Month. To highlight awareness for Celiac disease and food allergies, I am focusing our conversations with Louisville Ky local warriors and advocates. Annie May opened the first dedicated gluten-free and Top9Allergy Free Bakery in Louisville, Ky, in 2011. Her journey with Celiac disease and her food allergies led to her creating this bakery. What does it mean to be invisibly allergic? Zoe Slaughter joins me in The Allergy Dragon's Lair Podcast to share her life journey with her peanut allergy. Zoe lives in Louisville, Ky, just like me. I met Zoe at Rainbow Blossom on one of my wellness Wednesdays.  Not only did we have food allergies, but autoimmune diseases as common ground to discuss. But we also shared a love of food, and sharing knowledge to help everyone in our allergy community.  
Zoe shares how researching her allergies led to the creation of her blog. She also empowered others by advocating for herself during college and in various workplaces. Zoe is like so many of us living with food allergies daily and realizes that there is much to be done to improve our safety. Zoe is an agent of change and shares how she is trying to help so many of us locally by initiating food allergy policy changes for Louisville and KY.

Stephanie Hills, known as Food Allergy Master Mom on Instagram, joins me in The Allergy Dragon's Lair podcast today. In this episode, Stephanie shares her allergy mom journey, experience with OIT, and why we should all become food allergy masters. There is empowerment in being prepared, knowing the facts, and mastering our allergies. This allergy Mom shares how her 15-year-old son has become a master of his food allergies and controls his OIT treatment.

Turning Online Friendships into IRL Friendships is so amazing to me. The food allergy community is so amazing to me. In the face of adversity, limits, and being always prepared. This is a community that has made changes and continues to do so. Sometimes we get so poisoned by the negative we can not see how far we have come. We ask ourselves, are we even making a difference? We must remember to take a minute, look around, and live in the moment. Lucky for me, an online friend turned into an IRL Friend. About Kyle: Kyle grew up with multiple food allergies since the age of two. Managing severe life-threatening allergies in the '80s and 90's was not easy. His parents had a tough time convincing other people that allergies were real.
He often felt excluded from events and made to feel like a burden because of his food allergies. This made Kyle take risks with his allergies and become a homebody.
Kyle started Equal Eats, wanting to provide a better way for our community to communicate abroad, so they could feel more confident while enjoying the world. We all deserve an equal opportunity to live and enjoy a normal meal...just like everyone else.
