Pumpkin Spice Cookies
1 1/4 C Flour
3/4 tsp Baking Soda
1/2 tsp Pumpkin Spice (This is essentially Equal parts Cinnamon, Cloves, Ginger, All Spice,
Nutmeg. You can vary at your discretion)
3/8 C Brown Sugar Packed
3/8 C White Sugar
1 Stick Unsalted Butter (Softened)
3/4 tsp Vanilla Extract
1 Egg
1/2 C pumpkin puree (You can buy bake and puree your own, or just get a can of Libbys canned pumpkin. It shortens your time by hours)
Coating
1/4 C Sugar
1 1/2 tsp Cinnamon
Combine Group 1 and set aside
Combine Group 2 then add group 1
Add pumpkin last
Refrigerate for at least 4 hours.
Combine sugar and cinnamon in a bowl.
Mixture will be very pliable and squishy, so be quick with the next part.
Roll cookie dough into tablespoon sized balls, then roll in sugar and cinnamon coating completely.
Bake at 350 degrees for 17-20 minutes (stove dependent). Cookies will rise high in the middleand settle once they have cooled. It will will have an almost cake like consistency as opposedto a chocolate chips consistency.
This recipe yields 1 dozen 4” cookies
