Salsa and chips
1 large can (15oz-28oz) Stewed Tomatoes
You can make this very quickly with a food processor. Attach the knife blade and put the Jalapeños in the processor, reserving the liquid from the can for extra “heat” at the end. Pulse the peppers just a bit with the regular knife blade until they’re very chopped, then add the can of stewed tomatoes including its liquid and a bit of salt, then process a few seconds until the tomatoes are chopped enough to suit you. Taste and mix in more of the reserved jalapeño liquid if you need your salsa hotter. Done! Serve it with tortilla chips. Tostitos Scoops work very well.

6 ears unshucked fresh corn
Get your charcoal or gas grill ready to cook with medium-high direct heat, 400 to 450 degrees. You won’t be lining it with foil, you’ll be cooking right over the heat. To get the corn ready, leave the shuck on and cut the stalk end of each ear entirely off, right through the first row of kernels. A heavy cleaver will make this easy. Soak the ears in water. Put three ears on a microwave-safe plate and microwave on high for 5 minutes to partially cook them with steam. Hold each ear by the top and shake it, letting the corn cob fall out from the shuck, and if it needs a bit of help to come out, twist and push from the silk end. Then use a large bowl to coat the corn with oil and season with salt. Grill the corn directly over the heat, turning each ear often, until it’s browned or charred to your liking, 3 to 4 minutes per side. To make the sauce, whisk together the peanut butter, coconut milk, chile, lime, soy sauce, chives and ginger in a small bowl. Put the grilled corn on a serving plate and spoon the sauce on top. Serve each ear in a paper tray like you’d serve a hot dog.

Cook the beef until it’s barely done through, along with the onion and the green pepper. Then add it all to a crock-pot along with everything else, all the spices, the tomato paste and the beef broth or bouillon cubes, and give it a good stir. Then add salt until it tastes right to you. Cook it in the crock-pot on low for 6 to 8 hours. Then take 1½ cups of the stuff out and puree it with a stick blender just about 15 seconds on high until it is smooth, then return that to the pot and stir. This releases flavor and also thickens the sauce a little. You will probably need to thicken it more, so mix the the cornstarch with about ¼ cup of water and boil it in a separate pot for a minute or two. Then add it to the crock-pot. When it’s thick enough it’ll be a smooth chili that stays on the hot dog but doesn’t soak through the bun.

There’s money to be made with a good joint on the carnival lot, but to make that money you need some good games to get the cash out of their grubby little hands. You’ll be in the middle where customers can pass right by your joint, and here are 24 games that pay. Games like Duck Ring Toss, Horizontal Dart Game, Three Pin Bowling, Post Card Pickout, and 20 more. They’re all here, 12 pages of solid moneymakers, including detailed instructions and illustrations, restored from an original plan by famous carny Aaron Brill. These are easy and cheap to build, and they draw paying customers. You do the rest and rake in the dough.

Sweet & Sour Chicken or Pork
Make the sauce yourself or buy it from webrestaurantstore.com.
For each cup of sauce use about ½ cup of protein: boneless pork or boneless chicken thighs, and about 1 cup of vegetables like: broccoli florets, carrots sliced thin, strips of red or green bell pepper, sliced onion. You can adjust the flavor by adding up to ½ cup of pineapple juice for extra sweetness.
1 cup of white vinegar
Mix the meat and vegetables in a pot or a wok and fry it until it’s almost cooked through. Then add the sauce and keep cooking until the sauce boils. Mix the cornstarch with most of the water until it’s a pourable slurry at the last minute. You can’t mix it in advance because the cornstarch tends to sink to the bottom in a dense layer. When the sauce boils, pour in the cornstarch mix and keep boiling until the sauce thickens. If it needs more thickening use a bit more cornstarch mixture and cook awhile, and when the result is thick enough, take it off the heat and mix it with your fried meat and veg. Test this ratio to see how you like it. It should give you a well-balanced sweet & sour stir-fry that’s flavorful, colorful, and satisfying. Serve it with rice. A very cheap basic rice cooker will do, you don’t need a fancy one, you can get one for about $20.

Do you sell food at the fair?
For testing, you can work with smaller lots and use your home frying pan on a few pieces. Producing it for sale, use a commercial deep fryer. Suitable cheeses include Mozzarella, Pepper Jack, Swiss, Cheese Curds, any cheese that will stay in a block when it’s cut and battered.
2 pounds of cheese, cut into finger-size blocks.
Make a fairly runny batter. Coat each piece well, lay the pieces out on plastic wrap or parchment, and chill in the freezer for an hour. Drop one or two pieces gently and carefully into heated oil, 425 to 450 degrees. Remove when lightly browned, and drain. Serve with marinara sauce, ranch dressing, or mustard, Sriracha, jelly, almost anything.
They’ll love it!

Cornbread and Honey Butter.
Are you selling food at the fair? Nothing does so well to pair with many foods as a good hot square of Cornbread. That’s a quick bread made with baking powder instead of yeast and it’s made from a batter instead of dough. You can make it yourself easily in large pans and sell it to a happy and eager crowd. And this way it’s really popular.
The best baking pan is a shiny uncoated metal pan. These will give you a tender crumb and golden-brown crust. This recipe is for a deep-walled half-sheet size pan, 9”x13”. You’ll need:
2 ½ cups yellow cornmeal
2 cups of flour
½ cup sugar
2 Tbsp baking powder
1 tsp salt
2 cups buttermilk
2 large eggs
½ cup melted butter
Preheat your oven to 400 degrees and grease your pan generously. Then mix the melted butter, buttermilk and egg with a wire whisk in a deep mixing bowl until the result is fully combined. Stir in the dry ingredients just until everything is moistened, but a few lumps are fine. Overmixing this batter can lead to a dense or even tough result, so stop stirring as soon as the flour is fully incorporated. Since this quick bread relies on baking powder to rise, it should be baked immediately. Pour the thick batter into your pan and spread it evenly all the way to the corners with a spatula. Bake for 20-25 minutes until the top is golden and a toothpick inserted in the center comes out clean or with just a few moist crumbs. Start checking for doneness at the minimum bake time. It’s ready when the top is golden brown and the sides pull away from the edges of the pan. Serve warm with Honey Butter. It goes well alone or with soup, chili or beans.
Honey butter is super simple to make. Start with softened butter and your honey butter will be ready in 5 minutes! Just leave two sticks of salted butter out at room temperature for an hour or longer. Use a hand mixer to combine them with 4 tablespoons of honey. Portion the result into small disposable cups and refrigerate so it stays stable over time. Supply a tiny wooden spoon to spread the butter.
