    I’m a sucker for a good chocolate pie. There’s always Derby Pie TM from Kern’s Kitchen, which is very good and very copyrighted. But one that doesn’t get enough pub, IMO, is Kentucky Silk Pie. Like Derby PieTM from Kern’s Kitchen, it’s a trademarked name though not quite as vociferously litigated. Also like Derby PieTM from Kern’s Kitchen, it’s a Kentucky original. It’s right there in the name. I don’t know whether the actual recpie is copyrighted, too, so in an abundance of caution I just grabbed a reverse-engineered recipe off a random message board that I promise will still make you smile when you eat it:

    Kentucky Silk Pie

    1 package. instant vanilla pudding

    1 Cup sour cream
    1 Cup half and half
    1 tsp. Kentucky Silk or creme
    de cacao

    Thoroughly mix all ingredients. Serve with sliced

    strawberries, bananas, apples etc.

    COOKIE CRUST PASTRY

    2 c. sifted flour

    1/2 c. sugar
    3/4 c. butter or oleo
    2 egg yolks, beaten
    1 tsp. vanilla

    Mix flour and sugar together. Cut in butter with pastry blender until

    crumbly. Add egg yolks and vanilla.

    Mix lightly with fork until pastry holds together and leaves side of bowl

    clean. Chill until ready to use.

    Press in spring-form pan.

    Bake in hot oven at 400 degrees for 8 minutes.

    Actually, a recipe for pie CRUST. Pie crust is frankly the hardest part of making a pie. Whether it’s good or bad depends on weather, air pressure, what’s in your flour, all kinds of stuff. Most of us just cheap out and buy one at the store, but a good homemade crust is WORTH IT. Here’s a link to a good place to start. Fill it up with whatever you want, it’s your world.   • Barrel Proof #175: A Good Day for AbTuesday

    City vanquished Torontwo and exorcised NCFC, and so we’re gonna talk about it. Now for pie: pecan pie is one of my favorites but it’s not necessarily easy to do well. Here’s an easy, classic recipe to start:

    Ingredients

    1 cup packed brown sugar

    1/3 cup butter, melted
    3/4 cup light corn syrup
    1/2 teaspoon salt
    3 eggs
    1 1/2 cups pecan halves or pieces
    1 Pillsbury Pet•Ritz® frozen deep dish pie crust (from 12-oz package)

    Steps

    1 Heat oven to 375°F; place cookie sheet in oven to preheat.

    2 In medium bowl, mix brown sugar, butter, corn syrup, salt and eggs with electric mixer on medium speed until well blended; stir in pecans. Pour into frozen crust.
    3 Bake on preheated cookie sheet 35 to 45 minutes or until center is set. After 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Cool 30 minutes; refrigerate at least 2 hours until chilled before serving. Cover and refrigerate any remaining pie.

    It’s fall, and that means apples. Can you get apples just about any time? Sure, but fall apples are better because somebody said so. Apples mean apple pie, which is the best kind of pie, hands down. Here’s a GREAT recipe I found for skillet apple pie from Cookies and Cups.:

    Ingredients

    4 pounds Granny Smith Apples, peeled and sliced into 1/2- inch slices
    1 3/4 cup light brown sugar, divided
    1/4 cup flour
    1 teaspoon kosher salt, divided
    1 teaspoon cinnamon
    1/2 cup butter
    2 (round 12-inch) pie crusts, homemade or store bought
    1 egg white, whisked
    2 teaspoons granulated sugar

    Instructions

    Preheat oven to 350°F
    In a large bowl combine apple slices, 3/4 cup brown sugar, flour, 1/2 teaspoon salt, and cinnamon. Stir to coat the apples evenly. Set aside.
    In a 10-inch cast iron skillet melt the butter and remaining 1 cup of brown sugar together over medium heat, stirring constantly. Bring to a boil and boil for 2 minutes, continuing to stir constantly, and remove immediately from the heat.
    Place one of the pie crusts evenly OVER the brown sugar in the skillet and carefully up the edges. Pour the apples into the bottom crust. Top the apples with the remaining pie crust, pinching the edges to seal the pie.
    Lightly brush the egg white onto the top crust, and sprinkle with granulated sugar.
    Place the skillet on a baking sheet and place in the oven. Bake for 60 -70 minutes until the pie is golden brown and bubbly. If necessary shield the crust of the pie with aluminum foil for the last 10 minutes of baking to prevent burning.
