Bill Giles is an immunobiologist and yoga teacher and for more than 30 years in a clinical setting - he has been helping people with their mental and physical health challenges. He founded, directed and still work in the Canberra Medical Ecology Centres as a clinical biologist focusing on immune-related illnesses.

After completing several thousand case studies on the effects that defence chemicals in our vegetables, salads, fruits and grains, have on the human adaptive immune system, along with Rob de Castella, Bill founded the Deeks Health Bakery in 2004 which was then the world's first totally grain and gluten free bakery-the products of which have helped many people across Australasia to live a more normal life despite their diagnosed chronic immune related diseases.
