Celery is found around the world in habitats that are salty and wet, or marshy soils near the coast. Ancient literature documents that celery was cultivated for medicinal purposes before 850 BC. Since antiquity, the stalks have been enjoyed as food. Whereas a stalk of celery has a faint and barely discernible scent, other parts of the plant are powerfully aromatic. Steam-distilled from the seed of this white-flowered biennial plant, Celery Seed has a sweet, earthy, herbal aroma.
