CHARLIE APPEL IS A DEAR FRIEND OF MINE AND AMAZING CHEF. HE GOT ME MY FIRST REAL KITCHEN JOB AND HAS POSITIVELY INFLUENCED MY CAREER EVER SINCE. HE WAS THE SPECIAL PROJECTS SOUS CHEF AT THE RESTAURANT AT MEADOWOOD, AN AVID FORAGER(HE HATES WHEN I CALL IT THAT), AND SKILLED PRESERVATIONIST UTILIZING VARIOUS TECHNIQUES TO TELL A STORY ABOUT THE LOCAL PRODUCE, THE FARMERS THAT CARE FOR IT AND THE LAND IT COMES FROM. IN THIS CONVERSATION WE COVERED HIS HUMBLE BEGINNINGS, AND THE PROCESS HE UNDERWENT TO BECOME THE CHEF HE IS TODAY.
