ChefEatz Podcast Episode 1: From Dishwasher to Chef-Crafted Meals
In the first episode of the Chef Eatz Podcast, Neil “The Media Giant” Haley joins chef Jeff Servin for a conversation about the unexpected moment that launched his culinary career, the inspiration behind Chef Eatz, and the care that goes into preparing meals for busy people.
Jeff’s introduction to restaurants began at age 13 as a busboy at TGI Fridays. Years later, while picking up a dishwashing shift, he found himself helping on the cooking line after a lunch cook walked out. That afternoon, watching a chef flambé a dish sparked a curiosity that would change his life. He went home, started researching, and began pursuing cooking with a new sense of purpose.
Within four years of moving into the kitchen, Jeff became executive chef of that same restaurant. But learning to run one kitchen wasn’t enough. He sought experience in other restaurants, exploring pizza, Asian food, and French-inspired American cuisine to broaden his skills. His approach remains simple: keep learning, stay curious and bring passion to every plate.
That philosophy eventually helped shape Chef Eatz. After discovering how much easier meal prepping made life at home, Jeff began considering how to offer that convenience to others. He studied common complaints about prepared meals, including dry proteins, repetitive flavors, and disappointing portions, then built his approach around improving the eating experience.
In this episode, Jeff explains how he uses sous vide cooking, a low-temperature method over a longer period, to help proteins retain tenderness through reheating. He also discusses vacuum sealing, recipe development, ingredient choices, and why he wants each meal to feel like something a chef prepared specifically for the person eating it.
Neil shares his own experience with meal preparation, takeout, and the demands of running a business. For him, the appeal is having satisfying meals available without spending the evening shopping, cooking, or ordering delivery. Together, they discuss the time and money involved in everyday food decisions and why convenience, flavor, and thoughtful preparation all matter.
Jeff also describes the personal responsibility he feels as someone running a company with his wife. From cooking and packaging to choosing recipes, he wants customers to feel the attention behind the food. His private-chef and catering work reflects the same motivation: bringing people together around a meal.
