Her name was Elizabeth David, and she is widely considered the most important food writer of the twentieth century.
Her first book, A Book of Mediterranean Food, published in 1950, described ingredients that were simply not available in British shops at the time. Yet the book became a sensation, because people were hungry not just for food but for beauty, for pleasure, for the possibility of a different kind of life.
Today, the olive oil on the shelf of every British supermarket, the casual comfort with pasta and fresh herbs and regional European cuisines, owes a significant debt to Elizabeth David. She convinced an entire nation to start using garlic. That sounds like a small thing. It was not a small thing at all.
