"We really are looking for a spectrum of flavor, really. So we want to provide customers with options," said Brad. "What we are looking for, flavor plays a lot into that. Of course price plays into it and also who we are getting it from plays into that."

In this episode, Nathan, Brad and Josh settle the debate about fair trade coffee and compare it to ethical sourcing. Josh and Brad share their expertise about how both the farmer and the consumer can be mislead by the concept of not-so-fair trade.

While Josh, Reuben and Rachel were at SCA in Boston this year, they interviewed with the famous Morgan Eckroth. Soon after this interview, she was named the US barista champion of 2022. Really impressive stuff!

"Being a barista is a lot of skills all wrapped up in one job. I think the very unfortunate thing that I think we are all trying to change now, is treating barista positions as like kind of like entry level, because it is very much not. It is a difficult job, it takes a lot of skill sets."

Morgan Eckroth (well known as "Morgan Drinks Coffee") is the US Barista Champion of 2022, but before then, she was also a very influential coffee connoisseur. In this episode, Nathan and Brad interview Baba Java's head roaster, Reuben. They go in depth about the step by step process that it takes to source our coffee ethically and work with partners that hold our same values.

Reuben has been with Baba Java since 2018 where he began learning to roast. He was truly born with a talent for the art of roasting and just became CQI Certified as a Q Grader last year. There are less than 7,000 CQI Q Graders worldwide and only 400 in the US.

"Well as our motto is, it's excellence from farm to cup. We want to have excellence and we want to strive for excellence in everything that we do. From farm to cup. From sourcing the coffee as directly as we can to the farm, to brewing it properly," Reuben said. "We want to work with partners that share those values. With sourcing high quality coffee, ourselves sourcing high quality coffee."
