Dr Janette Walton is a senior lecturer in the Dept of Biological Sciences at Munster Technological University and is a principal investigator on the IUNA national dietary surveys in Ireland.

She graduated with a Bachelor of Science degree from University College Cork (UCC) in 1993 and then furthered her studies in Food & Nutritional Sciences completing both an MSc and PhD in this area. She has extensive experience in the dietary habits of the Irish population with specific interest in the paediatric population. She is a member of the FSAI sub-committee on Public Health Nutrition and has been a member of several working groups related to dietary guidelines for population groups in Ireland.

About Niamh Condon: Niamh is a chef that specialises in food for those with swallowing disorders and difficulty at mealtimes. With over 20 years’ experience in the catering sector and 7 years with dysphagia cooking, she has become known as one of the most inventive chefs in her field. Faced with challenges morally about the standard way in which pureed food was cooked and presented. It encouraged her to explore and innovate ways to give people pleasure from food again regardless of swallowing difficulties. From here the passion for all things pureed had taken off. Niamh has also put herself into the shoes of those consuming the meals on IDDSI level 4 pureed foods and thickened fluids IDDSI level 4 for 3 days, to learn about the daily struggles that people face. This had led to changes in her approach to IDDSI meal prep. She set out in 2020 to support other chefs and cooks with her company Dining with Dignity Ltd.

About Brendan Cullinane: Brendan completed his Masters in Dietetics in Glasgow Caledonian University in August 2015 and following on from this he undertook the International Olympic Council (IOC) Diploma in Sports Nutrition which he has recently completed. He has worked in a variety of areas across many disciplines over the last six years, as a community dietitian, a Sports Dietitian and a personal trainer in Scotland, Australia and Ireland. Over this period Brendan has worked with a variety of athletes as a sports dietitian specialising with elite athletes in a number of disciplines, including rugby, athletics, combat sports, crossfit and football to mention a few. He currently works as Hospital Key Account Manager with Nutricia and since moving home to Waterford and settling on our family farm with his wife and daughter Brendan has become a part time farmer, with a small suckler herd and too many pets to count.

About Dr Brian Power: Originally from Kilkenny in Ireland, Brian is currently a Lecturer in Nutrition at University College London. Prior to joining the University, Brian served as a lecturer in nutrition and dietetics at London Metropolitan University and the University of Hertfordshire. He is interested in understanding and changing eating and physical activity behaviours and the development and evaluation of behaviour change interventions. He is a registered Dietitian with the Health and Care Professions Council, and has experience working as a clinical dietitian in hospitals in Ireland, London and the Midlands, England. Brian has also spent some time volunteering in India. His voluntary work was part of a wider nutritional surveillance project for Seva Mandir, a community development non-profit organisation in the Udaipur district of Rajasthan, India.

Cati was born and bred in Rotorua with a strong grounding in both recreational and competitive sport. She has previously represented New Zealand in the Enduro World Series. Now she rides bikes locally after setting up a women’s ride charity The Mud Maidens. She's a longstanding member of the Rotorua Association of Triathletes & Multisporters and Lake City Athletic Club.
