Preheat your oven to 350°F (175°C).
In a large bowl, mix together:
1 stick of butter (cut into chunks)
½ cup white sugar
½ cup brown sugar
Stir until the mixture is creamy and smooth.
Add:
1 egg
2 tsp vanilla extract
Mix well until fully combined.
In a separate bowl, whisk together:
1½ cups all-purpose flour
¼ cup cocoa powder
½ tsp baking powder
½ tsp baking soda
½ tsp salt
Gradually incorporate the dry ingredients into the wet ingredients, mixing until a dough forms.
Fold in:
Semi-sweet chocolate chips (to your preference)
Peppermint-filled baking truffles (as desired)
Stir until evenly distributed.
Scoop the dough onto a baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set.
Cool on a wire rack before serving.
