Ingredients for the perfect vegan carbonara (for two servings):⬩ 100 g silken tofu⬩ 100 g unsweetened, unflavored plant-based milk⬩ 0.03 g saffron powder⬩ 2 g salt⬩ 15 g nutritional yeast⬩ Vegan parmesan to taste⬩ 150 g seitan, marinated with tamari⬩ 10 g all-purpose flour⬩ 4 g sugar + 15 g tamari⬩ Black pepper
Now that we have all the ingredients, let’s get cooking! Here’s how to make an amazing vegan carbonara:Cut the seitan into thin strips and let it marinate for 15 minutes with tamari.Meanwhile, in a blender or mixing jug, blend silken tofu, soy milk, saffron, salt, and nutritional yeast until smooth.Take the marinated seitan, mix it with a little flour to absorb the marinade, and then sauté it in a hot pan with some oil and a small piece of margarine.Cook over medium-high heat to make it crispy on the outside and tender on the inside.Once golden brown, add soy sauce and sugar to caramelize and give the seitan a glossy finish.Cook the pasta, and when there are two minutes left before it’s done, pour the blended tofu mixture into a pan. Cook it very slowly over low heat to keep it creamy. Just like the traditional carbonara, the sauce should remain smooth and silky, not scrambled.Add the spaghetti and slightly increase the heat to let the sauce thicken.Stir in part of the seitan and continue mixing. If the sauce gets too dry, add a little pasta cooking water.Plate the pasta, garnish with the remaining seitan, sprinkle with black pepper, and finish with vegan parmesan to taste.
