Mayan's Pumpkin Pie Recipe:
250 grams (9 ounces) all-purpose flour
130 grams (4.6 ounces) unsalted butter, softened and cut into cubes
1 kg (2.2 pounds) pumpkin, peeled and cubed
1 cup heavy cream, whipped
Combine the flour and salt in a food processor and pulse to combine.
Add the butter and pulse until the mixture resembles coarse crumbs.
Add the milk and pulse until the dough just comes together.
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
Place the pumpkin in a large saucepan and add enough water to cover the bottom of the pan.
Bring to a boil, then reduce heat to low and simmer until the pumpkin is soft and easily pierced with a fork, about 15 minutes.
Drain the pumpkin and return it to the saucepan.
Add the eggs, brown sugar, honey, cornstarch, salt, nutmeg, ginger, and cinnamon.
Stir until well combined.
On a lightly floured surface, roll out the dough to a 12-inch circle.
Transfer the dough to a 9-inch pie plate and trim the edges.
Pour the filling into the crust.
Bake for 40-45 minutes or until the filling is set.
Let cool completely before serving.
Top each slice of pie with a dollop of whipped cream and a sprinkle of cinnamon.
