Today (..a little later due to bank holiday drinking...) I am delighted to have Dave from Wilsons BBQ & Omar from Good Rub/ BBQwithbenmez on to talk about the more manual side of BBQ in offset smoking.

Having had Gaz (@GBgrillmaster) on talking Traegers and a few other people to chat other formats and since Ali (Sosij_uk) mentioned offsets in episode 3... I figured it would be worth dedicating a whole episode to what some class as 'true' BBQ. No bells or whistles just managing a pure wood fire in a heavy duty offset pit.
