Oggi vi voglio parlare della pasta, un alimento fondamentale della dieta mediterranea e in particolare delle famiglie italiane.La pasta può essere di semola di grano duro (Grieß/bran) quindi fatta solo con semola e acqua, con le uova e quindi parliamo di pasta fresca e ripiena, che è una pasta fatta con farina e uova e ripiena di carne, formaggi o verdure.

All’inizio tutto veniva fatto a mano e quindi la sola forma che esisteva era lo gnocco che poi, col tempo, veniva lavorato e prendeva forme come le orecchiette, le trofie.Gli uomini poi si sono accorti che si poteva premere l’impasto con un bastone e che, muovendo il bastone avanti e indietro, si poteva ottenere una sfoglia ...
