Sweet & Sour Chicken or Pork
Make the sauce yourself or buy it.
For each cup of sauce use about ½ cup of protein: boneless pork or boneless chicken thighs, and about 1 cup of vegetables like: broccoli florets, carrots sliced thin, strips of red or green bell pepper, sliced onion. You can adjust the flavor by adding up to ½ cup of pineapple juice for extra sweetness.
1 cup of white vinegar
Mix the meat and vegetables in a pot or a wok and fry it until it’s almost cooked through. Then add the sauce and keep cooking until the sauce boils. Mix the cornstarch with most of the water until it’s a pourable slurry at the last minute. You can’t mix it in advance because the cornstarch tends to sink to the bottom in a dense layer. When the sauce boils, pour in the cornstarch mix and keep boiling until the sauce thickens. If it needs more thickening use a bit more cornstarch mixture and cook awhile, and when the result is thick enough, take it off the heat and mix it with your fried meat and veg. Test this ratio to see how you like it. It should give you a well-balanced sweet & sour stir-fry that’s flavorful, colorful, and satisfying. Serve it with rice. A very cheap basic rice cooker will do, you don’t need a fancy one, you can get one for about $20.
