Selamat pagi! (Good morning) from Bali! In this episode we have the wonderful Chef Simon Jongenotter from Indonesia joining us as we explore the fascinating world of the culinary arts, their journey as an “Earth Custodian” whose relationship is that of a caretaker, not an owner to earth, and each other, the importance of Chakra points and so much more!
From leaving the Netherlands, Simon mentions how he feels spiritually connected to Bali, his current residing home, and how he believes that this beautiful location functions as a purification center, an energy of the world and he believes has a calling to aid the human consciousness. We learn of the sacred mountains in Bali, and Simon gets into the detail of the emotional and physical experience while recommending having a Balinese guide. Tiffany talks about her first retreat in Bali, while Simon explains how he ended up there and the school he founded to teach the culinary arts as he views foods as the currency of life. The discussion delves into topics such as what attracts people to Bali, Simon’s favorite space at the silent retreat, nature’s harmonizing system and learning from food forests, the military style from fine dining, recognizing hospitality that caters to everyone, and so on. Simon Jongenotter is an earth custodian, intuitive healing facilitator, and plant-based chef based in Bali, Indonesia. He’s the founder of the New Earth School, which teaches through strengthening our connection to self, others, and Earth. He’s co-founder and Executive chef of Zest Ubud, the well-known Ubud-based restaurant which, besides serving entirely plant-based cuisine, hosts leading-edge events around connection and human consciousness.
