What are wine tannins? And how does it affect our perception of wine?

Tannins are polyphenols found in plants, seeds, leaves, and fruit skins.  To understand better the sensation the tannins gave on the palate think about the tea leaves, dark chocolate, almonds with skins, cinnamon, clove, and other whole spices.
