Garlic Honey

  1. Peel garlic cloves and do a gentle smash on them to release oils but not change shape
  2. Add to a Mason Jar
  3. Cover in a local honey
  4. Gently stir daily and burp the gasses off.
  5. Let sit for at least 7-10 days. Ideally for about a month.

Fire Cider

  1. Start with a quart (4 cups) of raw, unfiltered apple cider vinegar (at least 5% acidity)
  2. About 1/3 cup grated horseradish and ginger roots
  3. 1/4 cup peeled and diced turmeric (or 2 tablespoons dried, powdered turmeric)
  4. Half a dozen cloves of minced garlic
  5. 1/2 cup peeled and diced onion
  6. 1 or 2 habanero chiles, split in half (or, use cayenne pepper)
  7. One large lemon, sliced rind and all (optional)
  8. 2 tablespoons chopped rosemary (or 1 teaspoon dried)
  9. 2 tablespoons chopped thyme (or 1 teaspoon dried)
  10. 1/2 cup chopped parsley (optional)
  11. A cinnamon stick, a few allspice berries, and a few whole cloves (optional)
  12. 1 teaspoon black peppercorns
  13. 1/4 cup raw honey, or more to taste

Instructions:

  1. Place the vegetables, fruits, herbs, and spices in a clean one-quart jar. Fill the jar with apple cider vinegar.
