Santa Pancakes
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1 cup soy milk (or other type of milk)
1/2 cup water
2 tablespoons canola oil
Strawberries (or raspberries) and bananas, sliced
Syrup and/or whipped cream (optional)
In a large bowl, whisk together the flour, baking powder, salt and sugar. Pour the milk, water and oil into the bowl with the dry ingredients and stir until just combined. It is better for the batter to be a bit lumpy than overmixed (less fluffy).
Heat a large griddle or pan over medium-high heat. Use cooking spray on the pan and drop about 1/3 cup of the batter onto it. Cook until bubbles form, then flip and cook until golden brown on the other side, about 1-2 minutes. Repeat with all the remaining batter.
Once all the pancakes are cooked, it is time to make them look like santa. Place a pancake in the center of a plate. Place banana slices around the bottom to form a beard. Now use the strawberries or raspberries to make a triangle at the top of the pancake. This is the hat. You can use banana slices or whipped cream to add trim to the at and at the tip of the hat. Easy as that! Have fun!
