Hi YouTube Family! Today we’re making crepes! This is one of my favorite foods. Yum! During the stay home orders I have moved to my kitchen, so my husband can work from our office. This opens the opportunity to have you come along and cook with me while we cover Happy Crappy Hour!

The topics today were how narcissists don’t think that they get bad karma. It’s just bad luck when it happens to them. Also, why are narcissists so blatant with their lies and cheating? Do they really think they can get away with everything?

For the Crepe batter:

put into a blender:

1 1/2 C whole milk

4 eggs

1 C sifted flour

3 Tbsp melted butter

dash of salt

—————————-

Add these to the blender if you want:

2 Tbsp sugar

dash or two of cinnamon

dash of nutmeg

splash of vanilla

Blend on low, pulsing for about 10-15 seconds. It really doesn’t take long. Batter should have the consistency of egg nog.

Crepes are super easy to make! Enjoy!

Hi YouTube Family! Today I want to talk about social distancing and why it’s making the Narcissist crazy. Narcissists need constant supply and the imposed isolation is causing narcissists to become unwound as they seek other means to reach supply. So don’t be surprised if you get a call or message from your ex narc. Be prepared to stay no contact!

Today, I made a combination Sambosa/Empanada. The filling was sambosa, but formed inside an empanada shell. The best of two worlds!

To make the filling:

brown ground beef (1 lb) in a skillet on medium heat

add chopped onions (one small to medium red onion preferred)

add chopped garlic (3-4 cloves)

season with 1.5-2 tsps of turmeric, several grinds of black pepper, dash of salt, and some bullion (one cube or to your liking) (I use Knorr chicken bullion),

mix on stove for a minute or two to cook in the spices

add one diced roma tomato

add one bunch of parsley that has been chopped (you can use the stems!)

taste and see if you need any more bullion, salt, or pepper.

In a cup, mix 1/3 C of water and one tsp of corn starch, then add to the mixture on the stove to thicken.

If you want to make a bit of a gravy, just add more corn starch and water (but mix them before adding to the pan)

Adjust the water and corn starch to the consistency you want your gravy to be.

Set this all aside to cool to at least room temperature.

You can also refrigerate the meat mixture and make the empanada the next day as seen in the video!

I then fried up the empanadas in about 1 cm of peanut oil (you can also use canola oil/vegetable oil) on medium to medium/high heat. Should take only 1-2 minutes on each side.

Enjoy with a sweet chili dipping sauce if you have some, or just as it is!

Youtube was giving me a lot of problems today, so I couldn’t show you the end result. They were delicious and all were eaten right away. :o)
