Charlotte is, quite simply, passionate about birds of prey. Since a young age she has devoted her life to these amazing birds and the art of falconry. With more than 60 birds of her own, with lots of different species, every waking moment is spent with these beautiful creatures. Learn more from her infectious attitude to this ancient art.

Jose Souto is possibly one of the most game focussed chefs in the UK. Born in London to Spanish parents, Jose embraces his Spanish cultural tradition, his English love of Fieldsports, his talent for cooking, and his vocation for imparting knowledge to others to really make an impact on the way we can all learn to access, harvest and cook game meat. If thats not enough, Jose has a passion for Birds of Prey and Falconry. It was a pleasure to spend a little over an hour chatting and learning more about this remarkable man.

We are joined by Charles Smith-Jones, an all round countryside man who specialised in wildlife management after completing a full military career in the Royal Welsh Fusiliers. Charles is the author of four countryside pursuit books which I recommend to all our listeners. They are packed with useful information and accompanied by a large library of photographs. Well worth having one, or more, on your coffee table!

A Yorkshireman who fell in love with deer whilst working on the Isle of Jura, Nigel is playing a key role in the countryside pursuit arena by bringing game meats to the general public. His passion for farming and game has enabled him to create a professional nationwide distribution network of game meats into retailers, the public, supermarkets and hospitality sectors alike. We need more people like Nigel to champion the sustainability of British game.

Paul Childerely is not only an award winning gamekeeper, sporting company founder and owner, Fieldsports Channel team member but also a 5 times world champion kickboxer and founder of Pro Style Kickboxing. On top of that he's a brand ambassador for the likes of Shooter King. He's incredibly busy but seems to be able to make time for almost anything - even this podcast.

Patrick is the current editor of the Shooting Times magazine. He's been in post for 4 years now and has a keen eye for what's happening in the field of shooting and fishing. It was a pleasure to chat with him and hear about his observations on where we are in our world of countryside pursuits, as well as learning a bit more about the man personally.

It was really interesting to get the view of someone in the industry with regard the demand, and supply, of game for retail and wholesale. Brexit has obviously had an impact on this delicate relationship so it was enlightening to hear about it first hand.

Although Giloe couldn't make it due to work commitments, it was great to hear how Eddie got involved in countryside pursuit and went on to form the Somerset Hunters on Instagram.  The guys love hunting but more importantly eating the spoils of their efforts.

Jim chats with Rick Whorwood. Rick is a Canadian expert fly fisher, instructor, and fly tyer. He's simply mad about fly fishing and it was great to hear more about his journey after first picking up a rod about 30 years ago.
