Jalapeno Crescent Cups

1 pkg sheet crescent dough plus a 4 count roll

6 oz diced jalapenos

8 oz cream cheese

2 Tbsp sour cream

6 slices of bacon; cooked, drained, crumbled

2 Tbsp chopped green onion

½ c shredded sharp cheddar cheese; plus enough to sprinkle on top

½ c mozzarella cheese

Preheat oven to 375.  Cut crescent roll dough into 18 squares.  Reserve 4 count for extra filling if needed.  Place crescent dough in creased mini muffin tins.  Mix remaining filling ingredients and spoon into crescent dough.  Top with shredded cheddar cheese.  Bake 12 minutes.  Allow to cool 5 min before removing from pan.

Grandma Susie’s Deviled Crab

1 lb crabmeat

1 cup breadcrumbs 

2 eggs lightly beaten

1/2 cup minced celery

1/2 cup minced green pepper

1/2 cup minced onion

1 tsp dry mustard

1 tbsp vinegar

2 tbsp worcestershire

1/2 tsp salt

1/2 tsp pepper

1/2 tsp hot sauce

2 tbsp lemon juice

1/2 cup melted butter

Melt butter in skillet and cook celery, pepper, and onion until done.  Mix all ingredients.  Cook at 375 in a greased dish.

Remoulade Sauce

Mayonnaise, dijon mustard, ketchup, worcestershire sauce, soy sauce, garlic powder, onion powder, relish or capers

Trader Joe’s Sheet Pan Dinner - pesto chicken breasts, package of cherry tomatoes, burrata spread over the top, drizzle with balsamic glaze and cook at 425 for 25 minutes.

This episode gets a full run down of Sharknado 2024 at Mandee’s condo.  We are so glad she is safe and has a new friend in a headlamp.  Katie finally got her end of semester “Katie Day” and it includes a museum.  We get to hear a run down of red carpets and championship games as well.

Katie Food:

Amish Baked Oatmeal

¼ c melted butter

½ c brown sugar (white sugar ok too)

1 ½ c rolled oats

1 tsp baking powder

1 tsp salt

½ c milk

1 tsp vanilla

⅛ c oil

Mix and bake at 350 for 30 to 35 minutes or golden brown.  Top with sauteed apples or other favorite oatmeal toppings.

Fruit Custard Pie

1 unbaked pie shell

2-4 peaches or 1 qt berries

1 c sugar

⅓ cup plain flour

2 eggs well beaten

½ stick butter, melted

1 tsp vanilla

Preheat oven to 350.  Prepare fruit and arrange in bottom of pie crust in one layer.  Mix sugar and flour.  Add well beaten eggs, melted butter, and vanilla.  Pour over fruit.  Bake until crust is brown and custard thickens and sets.  25-35 minutes.

Cream Cheese Danish Squares

1 package of crescent rolls

2 packages of cream cheese

½ c sugar

1 Tbsp Vanilla

Preheat oven to 375.  Bring cream cheese to room temperature.  Mix in sugar and vanilla.  Spread crescent rolls in the bottom of a greased 9x13 pan.  Spread cream cheese mixture over the top of the rolls.  Bake for 45 min or until cream cheese is set.  Let cool slightly and cut into squares.

**variations - I measure the vanilla and sugar with my heart and not a measuring cup, so the ½ cup could be a little off.  You can get another pack of crescent rolls and roll them out over the top and then make a powder sugar glaze or a cinnamon honey glaze.  You can get fruit to put on top after it is cool.  I often make it the night before and then put them in a cold oven the next morning.  This is very easy and adaptable to whatever you like!

What to take to a potluck that you won’t see 5 of on the table.

Spinach and Artichoke Casserole

3 10 oz packages frozen chopped spinach

14 oz can chopped artichoke hearts, drained

1 small onion minced

1 stick butter, melted

1/c c sour cream

2 packages cream cheese, softened

Parmesan cheese

1 tsp lemon juice

Garlic powder

Topping:

1 ½ c Ritz cracker crumbs 

Melted butter

Parmesan cheese

Cook and drain spinach.  Preheat oven to 350.  Line bottom of greased 9x13 baking dish with artichoke hearts.  Sauté onions in butter.  Add rest of casserole ingredients.  Spread over artichoke hearts.  Toss crumbs in melted butter and add parmesan cheese.  Sprinkle over casserole.  Bake uncovered for 20 min or until bubbly.
