This Friday our guest joining us for lunch is Paul Paine. Paul has been a permaculture designer since 1995 and was hugely inspired by forest gardens as well as by Plants for a Future and some of the weird edible perennials they were trialling. Paul also teaches permaculture through the WEA.
When Paul came back from his training he started work with Ecoworks and he has been there ever since. Ecoworks is a permaculture training site on the glorious and historic St Ann’s allotments which everyone MUST visit - its a green jewel in the crown of the city. Paul has also been involved in housing coops, fruit tree planting and even a cider club!
Lunch this week features a fully vegan lunch of Bang Bang cauliflower, oyster mushrooms on couscous steamed in coconut broth and a crunchy coleslaw. The Oyster mushrooms came from Penney's garden - you can't get much more local than that!
