It's not that you shouldn't aim to be 100% consistent.
You just need to be aware that you will fail at being 100% consistent.
And when you aren't 100% consistent - when you miss the deadline or eat the doughnut, it doesn't mean that you are a failure, or that your goal is unreachable.
It means that you are a person. Embrace it. Do what you can do, each day, and then move on.
Life is much better that way.
