The ladies discuss both the scientific research behind gratitude and the personal experiences that brought each of them closer to God through thankfulness and reflection. They share what they’re most grateful for, how gratitude shapes the mind and body, and the meaningful moments that strengthened their faith.

Ingredients — Pumpkin Bread:
• 1 tablespoon flax meal
• 2 tablespoons water
• 1 (14-ounce) can or 1¼ cups pumpkin purée
• ½ cup organic cane sugar
• ½ cup coconut sugar or brown sugar
• ⅔ cup avocado oil
• ¼ teaspoon kosher salt
• 1 teaspoon vanilla extract
• 2 teaspoons pumpkin spice
• 1 teaspoon cinnamon
• ¼ teaspoon baking soda
• 1½ teaspoons baking powder
• 2 cups all-purpose or Cup4Cup gluten-free flour
Vegan Cream Cheese Frosting:
• ¼ cup vegan cream cheese (Miyoko’s recommended)
• ¼ cup vegan butter
• 1 cup powdered sugar
• 1 teaspoon vanilla extract
InstructionsStep 1: Make flax egg by mixing flax meal and water. Let thicken for 5 minutes.
Step 2: Preheat oven to 350°F and grease or line a 9-inch loaf pan.
Step 3: In a large bowl, whisk pumpkin purée, cane sugar, coconut sugar, avocado oil, flax egg, salt, and vanilla until smooth.
Step 4: Add pumpkin spice, cinnamon, baking soda, and baking powder. Mix well.
Step 5: Add flour and gently fold until no dry streaks remain. Do not overmix.
Step 6: Pour into loaf pan and bake about 55 minutes, checking at 45 minutes. Cool completely before frosting.
Step 7: For frosting, beat vegan cream cheese and vegan butter until creamy. Add powdered sugar and vanilla and mix until smooth.
Step 8: Spread frosting on the cooled pumpkin bread, slice, and enjoy. (If eating warm, skip frosting.)
