VitaMeataVegeMin - How I make stock
Put ham bone in the vessel of the electric pressure cooker and cover with water. Add a bay leaf and three to five peppercorns. Bring up to high pressure and cook for 75 minutes. Let pressure release naturally. Strain stock and use for bean or split pea soup. Be sure to pick all the ham off the bones to add to the soup. It won’t have much flavor but will add a bit of chew and texture to the soup.

VitaMeataVegeMin - How I make yogurt
Heat a half gallon of organic whole milk to 180F then cool to 120F. Let ¼ cup of plain yogurt with live cultures come to room temperature. Temper the yogurt with the warm milk. Add tempered yogurt to the pot of warm milk. Mix. Pour into two quart sized canning jars and place in a cooler filled with hot tap water. Let set overnight or at least eight hours. Line a large colander with a flour sack cotton towel set over a container to catch the whey. Tie up the four corners of the towel together and suspend over the colander/container to drain. Let drain until reduced by half. Refrigerate the thickened yogurt and the drained whey separately. Use the whey to thin the yogurt if needed or when making baked goods. Otherwise, pour over your hydrangeas to acidify the soil. Sweeten the yogurt, if desired, with stevia and berries.

Greek Salad Dressing - similar to Mitch’s
In a food processor pulse 2 T lemon juice, 5 T cider vinegar, 1 t dried oregano, 1 t dried basil, 1 t dried tarragon, 1 clove garlic, 2 T Dijon mustard, scant t molasses, 1 T mayonnaise. Drizzle in 1 cup olive or vegetable oil or combination of the two. My food processor has a tiny hole in the bottom of the pusher thing and that pusher holds exactly one cup. I pour the oil in there and run the processor as the oil is drizzled in in a slow stream.
Asian Ginger Dressing
½ t garlic powder, 2 T grated ginger root, ¾ c oil, ⅓ c rice vinegar, ½ c soy sauce, 3 T honey, ¼ c water. Combine everything in a little sauce pot and warm to slightly liquify the honey. Let cool before dressing the salad.
Blue Cheese Dressing
¾ c crumbled blue cheese, 5 T buttermilk, 5 T sour cream, 3 T mayonnaise, 1 T white vinegar, ¼ t sugar, ⅛ t garlic powder, ½ t salt, ¼ t pepper. Mash the cheese into the buttermilk then mix in everything else.
