Prepararlo è semplice e il risultato finale è incredibile: un rotolo di impasto morbido, farcito con una crema al cioccolato irresistibile, il tutto avvolto da una bagna all’arancia che gli dà quel tocco in più di freschezza. Perfetto per una merenda golosa o un fine pasto speciale.

Provate questa ricetta, e fatemi sapere cosa ne pensate! Vi prometto che diventerà un must nelle vostre cucine. Ingredienti :

320g farina forte

170g latte

15g zucchero

15g lievito di birra

1 uovo

40g burro

5g sale

Per la crema :

100g cioccolato

30g burro

20g cacao

Metti in planetaria con il gancio tutti gli ingredienti tranne il burro ed il sale, che vanno aggiunti dopo circa 10 min, e poi va fatto lavorare per altri 15 min circa.

Dai qualche piega all impasto e mettilo a lievitare fino al raddoppio, poi stendilo e spalmaci la crema al cioccolato.

Fai un rotolo e mettilo in frigo qualche minuto prima di tagliarlo ed intrecciarlo.

Messo nello stampo fallo lievitare ancora per un oretta e poi infornalo a 180 C per 25/30 min.

Per la bagna :

100 acqua

100 zucchero

- 40g butter

For the cream:

- 100g chocolate

- 30g butter

Instructions:

1. Place all the ingredients (except the butter and salt) in a stand mixer with the hook attachment. Mix for about 10 minutes, then add the butter and salt. Continue mixing for another 15 minutes.

2. Give the dough a few folds and let it rise until it doubles in size. Roll it out and spread the chocolate cream on top.

3. Roll it up and place it in the fridge for a few minutes before cutting and braiding.

4. Place the braided dough in a baking mold and let it rise for another hour. Bake at 180°C (356°F) for 25-30 minutes.

For the syrup:

- 100g water

- 100g sugar

- Juice of 1 orange

Frolla :

150g Farina

15g Cacao

100g Burro

70g Zucchero a velo

3g Sale

30g tuorlo

Versa nella ciotola della planetaria la farina setacciata, lo zucchero a velo, il sale e il cacao in polvere. Aggiungi il burro freddo tagliato a cubetti, usando la K amalgamate il tutto a bassa velocità fino a formare delle briciole, simili a sabbia un po’ grossolana.

Aggiungi il tuorlo e mescola a bassa velocità fino ad ottenere un composto omogeneo.

Falla riposare in frigo coperta con la pellicola per 12 ore.

Stendila ad uno spessore di 3/4 mm e fodera lo stampo.

Inforna a 165C per 10 minuti, toglila e riempila con il composto che sarà il biscuit.

Biscuit al cioccolato :

30g Zucchero

60g Uova

20g zucchero invertito o miele

20g farina di mandorle

30g farina di riso

2g banking powder

7g cacao

20g burro

30g panna

10g cioccolato

Metti lo zucchero, le uova intere, lo zucchero invertito, la polvere di mandorle, la farina di riso, il sale marino, il lievito e il cacao in polvere in una ciotola e mescola con una frusta fino a ottenere un composto omogeneo

Sciogli il burro e il cioccolato, uniscili alla panna e aggiungili al composto, mescola bene finché non è bello amalgamato.

Versalo nella torta e finisci di cuocerla per altri 10 minuti a 165C.

Namelaka al cioccolato :

( dare fare 3 volte )

85g Cioccolato

3g gelatina ( colla di pesce )

50g latte

3g glucosio

100g panna

Versate in un pentolino il latte e lo sciroppo di glucosio e portare ad ebollizione. Versare sul cioccolato semi sciolto ed aggiungere anche la gelatina.

mescolare con un frullatore a immersione fino a ottenere un composto omogeneo.

Aggiungi la panna fredda a filo e continua a mixare.

Copri la namelaka con pellicola trasparente e mettila in frigorifero per 12 ore.

Un grande classico che non stanca mai 🤤

Ingredienti per una teglia diametro 34

Ingredienti :

500g farina

340g acqua

10g lievito di birra

5g zucchero

10g sale

30g olio

Procedimento :

Metti tutti gli ingredienti in planetaria ed impasta per 7/10 min, poi aggiungi il sale e l’olio ed impasta per altri 15/20 min circa.

Una volta formato l’impasto, dai un paio di pieghe e mettilo a riposare per circa 1 oretta.

Mettilo sulla teglia ben oliata ed inizia a stenderlo con le mani, anche qui facendo delle pause tra una stesura e l’altra per non stressare troppo la pasta.

Raggiunta la larghezza della teglia falla lievitare per un altra mezz’ora e dopodiché ungendoti le mani con dell’olio fai dei fori con le dita, metti tanti pomodorini conditi col basilico e olio in tutti i fori.

Infornala a 200C per 20/22 minuti circa.

Procedure:

Place all the ingredients in a stand mixer and knead for 7-10 minutes. Then, add the salt and oil and knead for another 15-20 minutes.

Once the dough is formed, give it a couple of folds and let it rest for about an hour. Place it on a well-oiled baking pan and start stretching it with your hands, taking breaks between stretches to avoid overworking the dough.

Once it reaches the size of the pan, let it rise for another half hour. After that, oil your hands and make dimples in the dough with your fingers. Place plenty of cherry tomatoes seasoned with basil and oil into all the dimples.

Dosi per una torta diametro 27/28

420g farina integrale

170g zucchero

250g burro

Pizzico di sale

Scorza di limone grattugiato

50g uova ( 1 uovo )

Inizia impastando le polveri con il burro e gli aromi finché non raggiungi una consistenza sabbiosa, aggiungi l’uovo e impasta ancora qualche secondo finché non sarà tutto unito. Non esagerare altrimenti diventa appiccicoso.

Impellicola il panetto di frolla e mettilo in frigo tutta la notte.

Il giorno seguente stendila aiutando con un po’ di farina, altrimenti tra due fogli di carta forno.

Fodera la tortiera e riempila di mermellata, metti le strisce e infornala a 170g per 25/30 min circa.

ngredients for a 27/28 cm diameter tart:

- 420g whole wheat flour

- 170g sugar

- 250g butter

- Pinch of salt

- Grated lemon zest

Start by mixing the dry ingredients with the butter and the aromas until you reach a sandy consistency. Add the egg and mix for a few more seconds until everything is combined. Don't overmix, or it will become sticky.

Wrap the dough in plastic wrap and place it in the fridge overnight.

The next day, roll it out with a bit of flour or between two sheets of parchment paper. Line the tart pan with the dough and fill it with jam. Add the strips on top and bake at 170°C (340°F) for about 25/30 minutes.

Inizia scaldando lo zucchero in pentola, quando inizia ad avere una colorazione bionda aggiungi il burro e mescola continuamente.

Quando sarà completamente sciolto aggiungi la panna con il glucosio ( scaldata precedentemente ) altrimenti lo zucchero diventa duro e si compatta subito.

Continua a mescolare finché non si addensa.

aggiungi del sale a piacere.

250g Philadelphia

400g panna

150g Nutella

Monta in planetaria la panna con la Philadelphia e la Nutella.

Una volta ben montata e stabile metti negli stampi un primo strato di crema, crea una cavità per il caramello e chiudi con un secondo strato di crema.

Liscia bene e metti in freezer per qualche ora.

Scrivi nei commenti glassa e ti mando la ricetta.

Inizia mescolando burro e zucchero, aggiungi poi le uova una per volta, attendi il completo assorbimento prima di aggiungere la successiva.

Infine aggiungi la farina setacciata e le gocce di cioccolato.

Cuoci a 180C per 10/13 minuti

Caramello

150g zucchero

30g burro

3g sale

90g panna

Inizia scaldando lo zucchero in pentola, quando inizia ad avere una colorazione bionda aggiungi il burro ed il sale e mescola continuamente.

Quando sarà completamente sciolto aggiungi la panna ( scaldata precedentemente ) altrimenti lo zucchero diventa duro e si compatta subito.

Continua a mescolare finché non è omogeneo e versalo sulle banane.

Impasto

200g banane

200g zucchero di canna

130g burro

3 uova

210g farina

10g lievito per dolci

70g noci pecan

50g gocce di cioccolato

Inizia mescolando lo zucchero con le banane ( meglio un po’ mature ) puoi farlo anche in una ciotola, io l’ho fatto in planetaria.

Aggiungi il burro morbido e continua a mescolare, aggiungi le uova, una per volta, ed una volta assorbite bene all impasto aggiungi la farina setacciata con il lievito.

Aggiungi le noci pecan e le gocce di cioccolato, versa tutto nella tortiera ed inforna a 165C per 40/50 min circa. Prova con lo stuzzicadenti che non sbagli mai.
