Ashley shares a great recipe:
Beef Enchiladas
Ingredients
1 lb ground beef
Taco seasoning
1 onion
2 cans red enchilada sauce
1 can green chilis
Pack of tortillas
1 1/2 cups shredded cheese
Brown ground beef and add onion. Drain off grease. Add taco seasoning. Stir in chilis and 1 can enchilada sauce.
Take other can of enchilada sauce and spread 1/2 of it in a 9X13 casserole dish. Roll up enchiladas with about 1 1/2 spoons of meat mixture and place enchiladas in the dish. (Makes about 10). Add cheese on top and remaining sauce. Bake at 375 degrees for 20-25 minutes.
