When COVID hit Denmark, Sebastian (IG account @sjsousvide), like all of us, had to find ways to make the most of being stuck at home. He turned to cooking. He is now a home chef who is a craft beer and beef connoisseur. Sebastian and I talked about cooking sous vide versus other options, finding a high temperature torch -- I pictured a flamethrower -- to get a good sear on certain dishes, and his favorite cutlery.
