When COVID hit Denmark, Sebastian (IG account @sjsousvide), like all of us, had to find ways to make the most of being stuck at home. He turned to cooking. He is now a home chef who is a craft beer and beef connoisseur. Sebastian also takes mouth-watering food photographs, some of which are used to promote Danish restaurant Steak-out and its amazing food (IG: @steakoutdk).
Sebastian and I talked about cooking sous vide versus other options, finding a high temperature torch -- I pictured a flamethrower -- to get a good sear on certain dishes, and his favorite cutlery.

My guest this week is Elyse Goode. Elyse and her husband Chad are veterans of the U.S. military and also Traeger grill enthusiasts. When their three children were very young, Chad was deployed, and after a long day Elyse found a bit of peace grilling her meals with, as she says, "perhaps a glass of wine or two."

U.K.-born and -raised Paul Aldred is of Jamaican heritage. In this episode of Biscuit Aisle, Paul talks about the influence of his parents' cooking and also how a Jamaican wedding ceremony is followed by a huge and celebratory reception with enough food to feed hundreds of guests for hours.
Whether we're accustomed to wedding receptions like that or not, one thing many of us from different backgrounds have in common is how meals bring people together around a table. Mealtimes can bring harried and busy parents and kids together, and they can also be mutual meeting grounds for opposing parties. Most often, however, mealtimes give us a reason to be together and to forge or strengthen bonds.
From serving overseas with the U.S. Navy to launching a restaurant just as COVID hit American shores, Chef Matt Lopez "puts home on the table" wherever he happens to be, even if it's fixing goat for his unit serving in Afghanistan.Â
Now he's back home in the Texas Hill Country. His young restaurant, Liberty Burger + Shake in Ingram, Texas, launched in early 2020 and will celebrate a formal grand opening on July 4th weekend.
Service to the country is a Lopez family tradition, and Liberty Burger is Matt's way of giving back to the place that gave him so much. Join us as we hear about his journey from Kerrville, Texas to the Middle East, Guantanamo and Greece, and then headlong into the restaurant industry in Austin, Houston and even New York City.
