I First Met Chef Yu During The 12 Days Of Christmas Event At Meadowood. For The First Time During My Tenure There I Was Assigned To Be The Sous Chef Who Would Head Up The Day And Made Sure Things Went By Smoothly For The Yu Dinner. I Was Fuckin Scared!
What A Sigh Of Relief When I Met The Man, An Absolute Sweetheart. My Nerves Were Eased By His Presence And I Was Able To Facilitate Without Any Problems. We Sucio Talked In The PDR Of Theodore Rex Where He Detailed His Upbringing, Getting Into Kitchens And Working Alongside Rockstars, To Eventually Opening A Restaurant Named Oxheart. He Would Later Close That Restaurant Stating It Was Just The Right Time To Do So.
This Is Something I Always Think About.
Whats Wrong With Opening A Restaurant For A Set Amount Of Time, Knowing The Day Of It's So Called "Death" Before You Open.
The Answer. ABSOLUTELY NOTHING.
You Can Do Anything You Want To Do. As Far As Im Concerned My Restaurant When I Have It Will Not Meet An Unjust Demise.
It Will Be Born, Live It's Life In Peace And Chaos (New Definition Of A Restaurant), And Then Pass On. Maybe That Means I Own The Space And Let Others Hone Their Craft, Maybe That Means I Let The Space Go For Others To Pursue Their Dreams In The Space Where I Made Mine Come True.
