The book of Leviticus was given to the Israelites shortly after they had been released from 400 years of slavery in Egypt. They hadn't taken care of themselves or provided for themselves in so many years and God knew they needed special instructions for how to live, prepare food, and things specifically not to do in order for them to be preserved as a people.
