Gareth's 3 mindset messages:
Food
When a guest says 'Wow - anything!' in response to what they'd like to eat, it's both exhilarating and slightly nerve-wracking. On one hand, I have complete creative freedom to craft something truly special. On the other, the responsibility rests entirely on my shoulders to ensure they enjoy a genuinely delicious meal. I do not create my own recipes, I usually use what's out there and sometimes add a touch of my ingredients if I feel the dish needs it.
I decided to make two dishes from Ottolenghi: Butter beans with roasted cherry tomatoes & Chicken Shawarma sandwiches. Gareth loved both of my dishes, especially the starter! The effort and researching for the perfect dish has truly paid off :)

1. Start with your emotions
2. Don't SEE your emotions, feel them
3. Choose compassion, awaken mastery.
Food
Nilesh is vegetarian, and when I asked what he would like me to cook for him, he gave me this: "I love all food. I am a huge foodie. I'd like you to cook what's authentic to you. Something close to your heart. So I can feel your love through the food."
I have never cooked Lithuanian "Saltibarciai" (Cold beetroot soup with kefir) on my show yet, but I always wanted to. Albeit I know it's not for everyone. I decided to take a risk and make it for Nilesh. :) I served it with crispy potatoes on a side. It is very healthy soup, and I truly hope Nilesh has enjoyed it. :)

Food
Rob is vegetarian, so he gave me suggestions such as paneer korma or halloumi. I actually only recently started cooking with paneer and completely fell in love with it.
Of course I am going to make exactly what my guest wants! I cooked the dish a few days before to test it with my family, and after I received everyones approval, I was delighted to cook it for Rob. He loved it! :)

Food
Anna is quite easy when it comes to food, and is happy for me to choose whatever, however she wrote that she LOVES scallops and so it was an easy decision to make. I love scallops too, so practising this dish was a true joy for me and my family! As always, I find recipes on the internet, and sometimes merge two different ones. That's what I've done here, and it turned out amazing! Anna loved this dish and that's a win for me!

Steve's 3 mindset messages:
Food
Steve enjoys all food, so he was very happy to go with my recommendation. However, he gave me some ideas: fish, lamb, vegetarian dishes & tapas. Something light & healthy.
I was watching Masterchef Professionals one day, when they made tartare beurre blanc sauce, and straight away I thought I want to make this sauce for Steve to go alongside nice Cornish sole with potatoes.
Not all the dishes require practise, but the sauce kept me practising twice before filming. I wanted to make sure I get the right flavour.
The sauce is so delicious, that I added it to my repertoire of sauces to be made to my friends when they come over for dinner. Steve truly enjoyed his dish and I made sure there is plenty of it! ;-)

Simon's 3 mindset messages:
Food
When Simon asked for "anything light and delicious," he didn't give away much. But after getting to know him, I found out he really loves food with plenty of flavor. I'm glad my dish hit the mark for him.
I always trust my gut feeling when choosing what to cook for guests. Once Simon mentioned wanting something light, fish seemed like the perfect choice. I thought Asian flavors would work well, and I wanted it to look good too. From his social media, I could tell Simon really appreciates good food.
I made crispy skin stone bass on a bed of light, flavorful curry, with crispy shallots and rice on the side. I made my own curry paste because the ones from shops just don't have enough flavour kick.
I also made beetroot cured salmon with apple and cucumber salad, and he loved every bite of it!

Cara Cunniff's journey has always revolved around connection—through food, culture, and the shared human experience. She has lived in cities like Paris, where she indulged her love of cooking with some short course training at Le Cordon Bleu, as well as in Germany, Belgium, and the USA, where she experienced the beauty of diverse traditions and cuisines.
Having lived in the diplomatic sphere, she's seen how meals are often more than sustenance—they become opportunities to build relationships, share stories, and forge lasting bonds across cultures and nations. These connections shape perspectives, foster mutual understanding, and, at times, influence decisions that ripple through national interests.
Professionally, Cara brings this same ethos of connection to her work in emotional culture and workplace transformation. As a former British Army officer, she had the privilege of working in the inaugural Psychological Operations (PsyOps) unit for the British Army—a role centred on influencing behaviour through 'hearts and minds'.
This experience gave her a deep insight into the complexities of human behaviour, the impact of strategic communication, and the power of narratives to inspire action and connection. Today, she applies these lessons when working with organisations to co-create strong workplace emotional cultures.
She works with organisations, teams and leaders to kickstart or accelerate strong workplace experiences and emotional cultures which boost performance, strengthen connections and engagement & create thriving workplaces.
A little more about Cara:
Cara's 3 mindset messages:
Food
Cara suggested to have ingredients of chicken, cheese, tomatoes, root veg. She loves Mediterranean and Ottolenghi and in general she just loves food!
After reading this, my mind straight away raced to form this picture of a perfect meal for Cara, full of flavour, hearty and delicious.
It would be all in one pan dish, and I found just the perfect recipe for that. As you know, I do not create my own recipes, but I often add my own touches if I feel like it needs something different or additional. I cooked Chicken breasts with mozzarella and tomatoes, served alongside crispy bread, pasta and refershing salad with balsamic vinegar pearls.

Alex's 3 mindset messages:
Food
Alex shared with me that he loves seafood and Thai cuisine. After careful consideration and research, I decided to prepare a light yet incredibly flavourful fish dish.
I discovered a wonderful recipe for steamed sizzling fish that I felt compelled to test beforehand. When I served it to my family, they were amazed by how much flavour this seemingly simple dish delivered and immediately requested it become part of our regular weekly menu. I complemented the fish with fragrant rice and a refreshing Asian spinach salad.
After tasting it, Alex remarked that he had never experienced cod prepared so deliciously and thoroughly enjoyed every bite. Seeing his genuine appreciation made the effort truly worthwhile! :

As a native of York, England's historic Viking capital, James lived a life driven by adventure and personal growth.
His journey began with 14 remarkable years in the military, serving as both a Royal Marines Commando and Special Forces medic, where he honed his discipline and learned the true meaning of resilience.
After hanging up his military boots, James took an unexpected turn and transformed into a professional magician. This new chapter saw him embracing the freedom of van life, traveling to perform and share the art of illusion with audiences across the country.
During this time, James also established himself as a property investor and private landlord.
James connection to the ocean began in 2012 when he caught his first wave, and surfing quickly became more than just a hobby. Understanding its therapeutic power—often referred to as "Blue Mind"—he now serves as a surf coach for military personnel and veterans, helping them find healing through the water.
Physical wellness has always been at his core. As a Brazilian Jiu-Jitsu competitor and Ironman triathlete, James continuously pushes his boundaries. This passion for holistic well-being led him to launch men's retreats and become certified as an Oxygen Advantage breathwork instructor.
Today, James works as a personal trainer, combining his diverse experience to offer a comprehensive approach to health and wellness.
Between training sessions and property management, you might find him on his motorcycle, seeking out new adventures and adding more chapters to his unconventional story.
You may remember James from Britain's Got Talent Competition, where he brought unflinching bravery to the stage with a performance that pushed the limits of danger and thrill.
James' 3 mindset messages:James wanted vibrant salad, made with rare tuna steak. Music to my ears!
I thought Japanese style tuna would be great here and to make it challenging for myself, I also decided to make it three ways. This meant I had to do a lot of preparation and planning in advance, but as always I wanted to make my guest to feel extra special.
As always I added my own touches and extra ingredients, but you may find similar recipes below:
I was so pleased all my effort paid off, James enjoyed these dishes and left my home with a smile!
James is a UK Registered Nutritionist with 30+ years' experience in nutrition and dietetics. He's co-founder and Chief Sustainable Nutrition Officer of Huel, and author of 'Well Fed: How modern diets are failing us (and what we can do about it)'.
Huel produce nutritionally complete sustainable food including powders, savoury meals, bars and drinks, and has sold 400+ million meals across more than 80 countries. As Chief Sustainable Nutrition Officer, James oversees the development of new products, nutrition communications and matters related to sustainability.
His book, Well Fed, explores contemplative nutrition: a dietary philosophy that encourages you to pause and reflect – just a little – on what you eat. James has also worked for seven years as a clinical dietitian in the NHS, and in the fitness and bodybuilding world where he advised professional-level athletes, as well as regular gym-goers, on their nutritional needs for optimum performance.
He's written for publications on food policy, the neuroscience and physiology of eating, clinical dietetics, sports, fitness and muscle-building, and lifestyle nutrition, and has given seminars across the world on both nutrition and leadership and has been featured on radio, television and numerous podcasts.
James's 3 mindset messages:
Food
"A theme of my book is minimising food waste. Could you make something that includes using up whatever veg you have in your fridge? Along with something plant-based but nutritionally strong - include pulses and a starch-source."
It may sound like a simple request (or not), but I tend to satisfy my guest food requirements.
o my surprise, when I opened my fridge to see if I had anything exciting there, I found a humble cabbage. I was away for two weeks over Christmas holiday and so did not expect to find much in the fridge.
However, cabbage really goes well with James's book theme and so should not be wasted (albeit I had to buy another two cabbages as the first one was used for a practice meal).
Cabbage, in fact, is a low-calorie food that's high in fiber and vitamins, and it contains many nutrients that can help improve your health.
In Lithuania, we have a delicious dish called "balandeliai," which is cabbage stuffed with meat. So I took that recipe but replaced the filling with what James asked. I used canned beans, lentils, quinoa, and chickpeas. I found inspiration from an Armenian recipe and made it completely plant-based (except with a side of Greek yogurt).
It was not an easy dish to prepare because cooking stuffed cabbage the traditional way did not work, as the filling was not meat. I decided to steam the stuffed cabbage rolls and add them in the sauce after. I think seeing a cabbage on the table was a little underwhelming for James, but he absolutely loved the dish and was pleasantly surprised.
To complement the main course, I baked an Oat and Carrot cake enriched with Huel protein powder. This nutritious dessert was designed to double as a wholesome snack for me during the week, and James was delighted to taste it too.
