Rosa Parks historical Peanut Butter Pancake Recipe:
Featherlite Pancakes
Sift together 1 c. flour, 2 tbsp. baking powder, 1/2 tsp. salt, and 2 tbsp. sugar. Mix 1 egg, 1-1/4 c. milk, 1/3 c. peanut butter melted, and 1 tbsp. shortening or oil. Combine with dry ingredients. Cook at 275 degrees on griddle.
My Creative re-invention:
Use plant based meatless faux sausages, brown in a skillet. Use a griddle, deep fryer, air fryer, ice cream sticks (or not) depending on how you create yours. In a bowl, use the historical Rosa Parks Peanut Butter Recipe Above. Once your cakes are bubbly looking on the top, flip them and roll one faux sausage up, secure with a tooth pick. Once sealed, remove and let breath few minutes on your plate. Sprinkle with powdered sugar and serve with fresh fruit of your choice and if your like me a big peanut butter lover, instead of syrup, place on big dolap of it on your plate and then you can dip your fruit and pancake in it.
