Oysters Rockefeller was invented in 1889 by Antoine’s in New Orleans when the chef was short of escargot. The very rich dish was named after John D Rockefeller, the then-wealthiest American. They are my favourite way of eating oysters. This recipe is my interpretation of this classic.
