Here is her recipe for Vegan Mozarella she was kind enough to share:
1/3 Cup Raw Cashews (Soaked for about 4 hours in water)
1 Cup Water (filtered suggested)
3 heaping teaspoons potato starch (can use tapioca starch also)
1 tablespoon nutritional yeast
1 teaspoon apple cider vinegar
1 teaspoon salt
Blend all ingredients together in a blender. Pour into a saucepan and stir, stir, stir over a medium heat. It will start THICKEN and STRETCH -much like mozzarella does. You're done! Store leftover in a container in the fridge. She uses this on her vegan pizza's and vegan poutine (a french fries/gravy/cheese dish from Canada).
