•1/2 ounce-ish dried mushrooms or about 1oz fresh mushrooms.
•1 1/2-1 3/4 cups not-quite-boiling water if using dried mushrooms
•1/4 cup oatmeal
•1 tsp of salt
•black pepper (I measure with my heart, probably about 1/4-1/2 tsp)
•1/4 tsp celery seed
•1/2 tsp dried thyme or about double to triple that of fresh
•2-ish tbsp butter
•1/2 cup-ish of chopped foraged greens, peppers, etc.
•1 med onion, or foraged/wild equivalent
•1 clove+ of garlic/wild garlic (I usually use a whole bulb)
•1 lb ground meat or meat substitute
Directions:
1. If using dried mushrooms, soak them in the hot water for 20-30 minutes.
2. Drain mushrooms. Save the water. Trim any woody/unwanted parts of mushrooms and then chop. If using fresh mushrooms, wash, trim, and chop. If making mushroom gravy, set aside about 1/3 of mushrooms.
3. Preheat oven to 350* F. Line or oil 9x12 pan or 2 loaf pans.
4. Combine oatmeal and about 1/4 cup of saved mushroom water in large mixing bowl. Add salt, pepper, celery seeds. Mix.
5. Melt butter in skillet over med heat. Add mushrooms, peppers, greens, onions, garlic, etc. Sauté until onions are translucent. Remove from heat. S
6. Scrape contents into mixing bowl with oatmeal mixture. Mix well. Add meat/meat substitute and thyme, and mix with hands until well combined.
7. Shape into loaf/loaves and place into pan(s). Bake for 45 min to 1 hour, until 165*F.
Mushroom gravy.
•1 tbsp bacon drippings or butter.
•1 small onion/wild onion equivalent
•2+tbsp finely chopped mushrooms (or reserved from meatloaf recipe)
•1 tbsp flour/cornstarch
•1 cup broth or reserved mushroom water
•1/4 tsp liquid aminos, soy sauce, or Worcestershire sauce
•salt to taste
•black pepper to taste
Directions:
1. warm/melt butter or bacon drippings in saucepan over medium heat.
2. Add onion and mushrooms. Cook, stirring often, until onions are translucent. Add flour/starch until well combined. Cook for about a minute.
3. Stir in broth or reserved mushroom water. Stir constantly until thickened and smooth. Remove from heat.
4. Stir in salt, pepper, and aminos, soy, or Worcestershire sauces.
