The study investigates the physicochemical and polyphenolic characteristics of Sicilian Grillo wines produced between 2011 and 2021. Using chromatographic techniques and chemometric analyses, researchers examined how wine composition changes over time and whether specific compounds can be used to monitor wine evolution, authenticity, and shelf-life.
The results revealed the presence of three distinct groups of wines corresponding to different production periods. While pH and soluble solids content remained relatively stable, several polyphenolic compounds showed significant variations across vintages. These differences appear to be linked not only to wine aging but also to modifications in the winemaking process, including changes in clarification practices.
The research highlights the potential of polyphenols as reliable markers for identifying wine vintages, assessing production processes, and monitoring the long-term evolution of one of Sicily's most important native white grape varieties.
