The night before:

Mix 1 cup oats in 1½  cup of milk (of your choice - we use oatmilk) with a heaping tablespoon of cinnamon and a good glug of vanilla.  Leave overnight.  (If you wake up with a hankering for these pancakes, you can soak the oats for just half an hour, but it is better to leave them overnight)

To finish:

In a standing mixer or with a , mix on high 2 eggs with ¼ cup sugar until fluffy.  Add ¾ cup white flour and 1 tsp baking powder ( I actually add ¾ cup of Bob’s Red Mill Gluten Free Pancake mix) and mix.  Add the oats and milk mixture and mix again until it is a consistent batter.  Finally, add 1 tbsp melted butter.   Cook as you would cook pancakes on a griddle or skillet.
