A Prayer for the Intercession of St. Maximillian Kolbe
St. Maximilian, amidst the hate and lonely misery of Auschwitz, you brought love into the lives of fellow captives, and sowed the seeds of hope amidst despair. You bore witness to the world, by word and deed, that only “Love alone creates.”
Help me to become more like yourself. With you and Mary and the Church, may I proclaim that only “Love alone creates.” To the hungry and oppressed, the naked and homeless, the scorned and hated, the lonely and despairing, may I proclaim the power of Christ’s love, which endures forever and ever. Amen.

RECIPES FROM RITA: Two way slow cooker Cubano pork
To assemble as a traditional cold Cubano pork sandwich, smear a fresh sub roll with yellow or your choice of mustard. Make layers of Swiss cheese, shredded pork, thinly sliced ham, thinly sliced red onion and dill pickle slices. Eat it as is or make a panini type sandwich on a stovetop grill or skillet.
Ingredients
2 tablespoons or so olive oil
2 teaspoons salt
2-1/4 teaspoons ground cumin
2 teaspoons dried oregano
1/4 teaspoon dried thyme
1 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes
1 generous tablespoon garlic, minced (4 nice cloves)
1/4 cup lime juice or to taste
1/4 cup orange juice or to taste
2-1/2 pounds or so fresh boneless pork shoulder – don’t trim away all the fat
Instructions
Stir together the oil, salt, cumin, oregano, thyme, black pepper, red pepper, garlic, lime and orange juice.
Make slits in the pork and rub the spice mixture all over and into the slits as best you can.
Place pork in sprayed slow cooker and add any remaining spice mixture.
Cover and cook on low until tender, turning pork once halfway through if you can, about 4 hours or so.
Remove from slow cooker, let cool a bit and shred into fairly thick chunks.
