How does a Filipino pop-up bakery go from pandemic bake sales to the Vegas Golden Knights' arena? Kimmie Mcintosh, two-time James Beard semifinalist and co-owner of MILKFISH Bakeshop in Las Vegas, tells Joyce the whole story.

On the very first episode of Table Talk with Joyce, host Joyce Slusher sits down with Kimmie McIntosh, the chef behind MILKFISH Bakeshop, a Filipino-inspired pop-up bakery she runs with her husband, Josh. Kimmie was named a James Beard Award semifinalist for Outstanding Pastry Chef or Baker in 2024 (with Josh) and again in 2026, and this October she was invited to bring her desserts to the Vegas Golden Knights' first-ever Filipino Heritage Night at T-Mobile Arena.

It started in 2020. Home with two kids and looking for a way to help, Kimmie joined Bakers Against Racism, the movement started by pastry chef Paola Velez, and began hosting virtual bake sales for nonprofits. Those bake sales turned into MILKFISH. Kimmie and Joyce talk about trading nursing for culinary school, managing anxiety in a fast restaurant world, learning her grandparents' recipes as an adult, and why her karioka is more than just a dessert.
