Dublin born Colin Fassnidge was the Executive Chef at the Four in Hand for over ten years. Colin's second venture, 4Fourteen, reimagined family meals that he had in his youth. Next he helped reinvigorate a run-down local suburban pub, the Banksia Hotel, which reignited his love of pub dining. Colin's creative yet refined take on the nose-to-tail food philosophy turned this unassuming pub dining room into an awarded and celebrated dining destination. Colin's opinions and honesty led him to appear as a judge on Channel 7's ratings winner 'My Kitchen Rules' and during Covid he started offering online cooking classes from his own kitchen.
