From Tuk-Tuk Tours to Traditional Cuisine

Before Mr. Bifana, Fernando’s path wound through a management degree in Lisbon, work as a waiter and bartender, an eight-month round-the-world trip on $10 a day (capped off by hitchhiking from LA to Alaska), a completed airline pilot course cut short by COVID, and eventually driving his own tuk-tuk as a tour guide in Lisbon. It was there, meeting American tourists daily and reflecting on travels to 100 countries, that he noticed a gap: Portuguese cuisine has a strong presence in Portuguese communities across the U.S., but almost no presence tailored to the broader international crowd, especially in a city as multicultural as New York. Mr. Bifana launched about a year ago to fill that gap.

The Sandwich Itself

The bifana is Portugal’s everyday comfort sandwich, the food people eat to get through the day. Fernando emphasizes he isn’t creating anything new or adapting the recipe for American palates: he partnered directly with Solar dos Presuntos, a restaurant he calls the best in Portugal for traditional cuisine, to develop the recipe, and sources his bread from a Portuguese bakery in Newark that he considers non-negotiable. Unlike sandwiches where the bread is just a vehicle for the filling, Fernando says the bifana’s bread is built to soak up the meat’s juices without falling apart, making it as essential to the experience as the meat itself.

The feedback splits into two camps: newcomers who’ve never had a bifana are struck by a flavor unlike anything else in New York’s crowded sandwich scene, while Portuguese New Yorkers simply say it tastes like home, which Fernando says is exactly the goal.

Built on Authenticity, Not Adaptation

A recurring theme: Fernando pushes back on the instinct many in the Portuguese diaspora have to water down traditional dishes for wider appeal. His approach is the opposite, bring the real thing and trust that people, both newcomers and homesick Portuguese alike, want authenticity rather than a localized version.

The Visa, the Grind, and the World Cup Turning Point

Building Mr. Bifana came with an added layer most founders don’t face: securing an E2 investor visa, which took significant time before he could operate at full capacity. Early growth came through pop-ups (sometimes bringing in extra staff just to help network), a five-and-a-half month setback when he tore his ACL and had to return to Portugal for surgery, and a slow rebuild after returning to New York this past March.

The real catalyst was the World Cup. Following the Portuguese national team to events in Houston and Miami grew Mr. Bifana’s following from 1,200 to over 14,000 in about two months. A 22-day residency at Time Out Market’s Portugal House during the tournament further built brand awareness, introducing the bifana to internationals for the first time through content creators and foot traffic. That momentum led to a permanent partnership at 10 Degrees Bar on St. Mark’s Place, alongside ongoing pop-ups in Newark, the Lower East Side, and Union, NJ.

What’s Next

Fernando is deliberately taking things step by step, no investors, no long-term lease commitments, just steady execution at 10 Degrees for now. Looking five years out, he mentions a storefront, potential partnerships with markets like Time Out Market, and expansion into cities with strong Portuguese communities: Florida, Texas, Fall River, Boston, Providence, and even Toronto.

Advice for Founders

Don’t wait until you have every answer. Fernando’s take: if you have the vision and the will, go do it, the rest gets figured out along the way. He points out that not having a rigid plan kept him open to opportunities he wouldn’t have found otherwise, landing at one of New York’s best bar locations rather than locking into a Midtown storefront as a tourist might assume he should.

From Real Estate to Bushwick

Nisha spent about ten years as a real estate agent in Thailand before the pandemic pushed her to reconsider what she wanted next. She’d always dreamed of opening a restaurant, so in 2022 she moved back to New York, worked overtime as a cocktail server to save up capital, and leaned on a year of earlier kitchen training (a hotel chef program) plus hands-on experience running marketing and Instagram for a friend’s Thai restaurant, where she first discovered how much she loved building a brand’s community, not just cooking the food. That partnership gave her the real-world experience that eventually pushed her toward opening something of her own.

Why “GiGi”

The name came before the concept. Nisha wasn’t chasing a specific dish or cuisine label first, she was chasing a personality. Once “GiGi” clicked, she says, the colors, the hand-scripted logo, the whole vibe followed naturally, the way a parent might say “yep, that’s definitely my daughter” about a kid’s personality. She deliberately avoided opening just another Thai restaurant serving the expected Pad Thai and fried rice. Instead, GiGi centers on Khao Soi-style curry-and-noodle combinations, letting people mix and match curries with noodle types like udon, egg noodle, or even poutine, something distinct from what already exists in the neighborhood.

Starting Small, On Purpose

Nisha chose Bushwick specifically for its young, artistic community, and chose to start in a small bar-seat-only space rather than waiting for a bigger buildout with partners. Her reasoning: with partners come compromises, and she wanted room to fully execute her own vision, down to details like neon lighting, before scaling. She’s candid that the tight space has led to some awkward moments (customers expecting tables that don’t exist), but she doesn’t see that as a setback so much as proof the brand and online presence are resonating.

The Reward of Merch and Loyalty

One of the most emotional threads in the conversation: Nisha designed a GiGi hat almost on a whim, and was surprised when customers began asking to buy one for themselves. That, more than follower counts, is what she points to as the real payoff, seeing neighbors return, say thank you, and want to visibly represent the brand.

What’s Next

Nisha is already looking toward a bigger space with more seating and a full bar as GiGi’s Bushwick presence grows. She’s less focused on follower counts and more on making sure people simply know who GiGi is and what it stands for.

Start from passion, not imitation. Nisha’s take: the day-to-day of running a food business brings a hundred problems to solve before lunch, and only genuine passion keeps you showing up for it.

From Culinary School to Burnout to a Side Project That Took Off

Building a Brand, Not Just a Product

Three and a half years in, Savannah’s talks candidly about what it means to be a founder-led, founder-facing brand: being vulnerable in public, sharing the real behind-the-scenes rather than polished ads, and building community with customers rather than just marketing at them. She also gets into the discipline it takes to run a one-woman operation early on, from bottling and labeling syrups herself to learning she needed structure (and the occasional cinnamon roll reward) to stay consistent.

What’s Next

Caribe & Co started at farmers markets, shifted toward direct-to-consumer in 2024, and this year launched food-service sizing aimed at cafes. The next five years: onboarding a distributor, expanding into more cafes, growing the product line, and eventually offering flavors year-round instead of in seasonal drops, pending a larger manufacturing partner who can scale without compromising the recipes.
