This week Chris meets Betina Skovbro , founder of the Danish Bakery in Cardiff.
Betina originates from Copenhagen where she grew up watching her one grandfather bake & the other create his own business as a blacksmith learning from a young age how to be resilient in business and how to bake!
Betina tells us how she would stay out partying until 5 am in the morning just to get the warm loaves coming straight out of the bakeries in Copenhagen ...
Betina realized quite quickly that school wasn’t for her and left Copenhagen in search of her dream career in Photography. Arriving in Cardiff Betina became a photographer for a local newspaper than as an independent photographer.
Soon though Betina grew tired of the extra admin work around her passion for photography and started to bake ..claiming “ how hard can it be ?”
She opened the bakery in Pontcanna in Cardiff and soon after the shop in Penarth.
Chris & Betina talk all about 2 am starts, Dyslexia, challenges around finding bakers, apprenticeships & how her leadership style has evolved as the business has grown.
Betina’s love for baking has really been tested over the last 12 months but the support of her team, her family, and her amazing local community has seen her through, and now has to find a way to expand the bakery again!
This is a founder with no food retail experience doing it her way, following a dream, and educating local young bakers along the way.
